after the feast

if there was one slice of time to slip-slide into a bottle, to save for a rainy day, to relish, it might be that hushed and sumptuous moment when you tiptoe down the stairs and round the bend into the still-dark kitchen, first thing the morning after a very big feast.

the kitchen counters are cleared, the cookstove is sighing a deep sigh of relief, of exhaustion, of having been put through the holiday paces; all burners now still after blasting for hours, the oven now deep in a post-prandial sleep. there might be a bottle tucked off to the side, or the one lonely crescent roll that wasn’t torn into, the odd stack of plates that never got called for duty. open the fridge, though, and the shelves nearly groan, now pressed into service in hopes of preserving just a wee taste of all that was stirred and sautéed and browned and baked and roasted and mashed and pureed and, finally, dolloped over the course of a five-day kitchen maneuver, one mapped out with lists upon lists and timelines and charts and post-its galore.

as i sit snug at the old kitchen table, keeping watch on this blustery drizzle-drenched day, sipping my mug of the one hot liquid that catapults me out from under the covers, i find myself soaked in the grace of a year stitched with sadness, yes, but just as emphatically sewn with a hundred thousand shimmering threads of blessings for which my heart whispers thank you.

i’d start, sure as could be, with the three beds upstairs filled with long lanky boys who come in three sizes — small, long and longer. (while we’re at it, i’d add a long note of thanks for the post-feast delirium that more likely than not will fuel their sweet dreams — and my all-alone quiet — till long past midday.)

it wouldn’t take long — not far from the top of my roster of thanks — till i ticked through the deeply-loved friends who keep me aloft through whatever storms try to yank me down under.

i am thankful, so thankful, for this arthritic old house, and its creaks and its groans. for its doors that won’t close, and the window or two that refuse to budge open. i’m grateful of course for my unruliest garden, the one that paid little mind when i left it (mostly) to its own devices this much abandoned summer. thank God, yes and yes, for my little birds, the ones who buoy my heart with every flap of their wings, each chirp that rises up from their lungs and their throats and their short little beaks. thank you, especially, for the scarlet-robed cardinal i’ve lured back to my roost with scoop upon scoop of sunflower seed.

thank you for the crotchety old cat, the one who decides most nights around 3 in the morn that there is a world beyond this old house through which he must roam; the very old cat, by the way, we’re convinced we’re keeping alive through super-strength doses of love and not a few cans of high-grade tuna.

thank you, heavens above, for brothers strung across the country, and sisters-in-law i could not love more. thank you for mothers, by birth and by heart, ever my back-up squad, at home or afar. thank you for fathers, now resting in heaven. thank you for little niece and adorable nephew, proof that growing up loved is hope for the world.

thank you for books. and thank you for nuggets of time to burrow deep into pages, to contemplate a thought or a word — an old friend of a word or one newly unearthed. garner modern usagethank you, specifically, for my brand-new “garner’s modern american usage,” a genius of a roadmap through the vagaries and tight spaces of vernacular language (the late and ever-brilliant david foster wallace claimed it “eminently worth your hard-earned reference-book dollar“).

and thank you just as deeply for the gem that arrived in the other day’s mail, wendell berry’s “sabbaths 2013,” a small-press edition of 20 poems, signed by the master, and filled with wood engravings now etched into my soul.

thank you for sacred hours in light-dappled woods with a long beloved friend whose hours, we knew, were numbered. thank you, months later, for the minutes i sat at her deathbed. and thank you, yes thank you, for the long hours since, as we grope through the dark, wrapping our hearts around her left-behind beloveds, as we cry with them, make room on the couch, share blankets, pile plates with good eats, and blessedly utter her name amid the swapping of stories and deep belly laughs, and believe — even when they cannot — that the light will someday come again.

my list of thank yous is long. my list of petitions seems to never grow shorter. so before i sign off, the ones that top this season’s beseeching: a friend and a sister i love, both still facing cancer head on. and another friend whose ankle, of late, is shot through with screws and rods and titanium plates, and who finds herself recliner-bound, though she’d never complain, not even a whimper.

lest i linger too long, before i rummage through the fridge, pile my plate with a spoonful of this, a swift taste of that, these are a few of the prayers that rise from my heart, on this, the glorious morn after the feast.

thank you, and bless you, amen and amen.

at my house this morning, one of the somethings left on the counter is a tumble of string from a box from the bakery where my husband bought brownies to stack into a tower in homage to his papa, whose november-25th birthday was often shared with the turkey, always nestled nearby, and always punctuated with thick-frosted brownies, bedecked by my sister-in-law. this year, far from new york and new jersey, my sweet mate stacked the chocolaty tower with architectural precision and not-often-seen tears in his eyes. it was a son’s salute to his bakery-born papa.photo 2photo

mac n cheese

for two decades now, ever since may of 1995 when i was plotting my firstborn’s second birthday fete, and i flipped open the pages of my monthly infusion of delicious, gourmet magazine — before it was ruth reichl’s gourmet magazine, before it was defunct, folded into the crypt of long-gone magazines, magazines that shaped our culture and then withered and died, the sad fate of so much of what’s printed in ink on the page — page 200, the page where the binding is coming unglued, the page crusted with splatters of roux, it’s been my no-fail, last-ditch, best-hope-of-filling-a-hole-in-a-heart-by-way-of-the-belly cookery map.

so it was yesterday, a crisp october day, when the sun poured in as if from a flask of molasses, so it was on a day when the boy who’d loped from the car at the school house curb was a boy with a leaden heart. he had so much homework, was so worried about homework, that he’d decided to skip the end-of-the-season soccer gorge on pasta and pizza. instead of hanging with friends, he’d decided he should come home straight after practice.

to make matters a tad bit worse, i wouldn’t be home when he got there. i try hard to keep my nights away to a serious minimum, but last night was a night i’d promised to be elsewhere, in a dim-lit watering hole and song hall, actually, reading words from a page for a very fine purpose, all to raise funds for a most noble cause.

i’m always torn when tugged away from my boys. and at the end of this week, this week when the lights in the kitchen never went out before midnight, because a young soccer player was trying hard to finish all of his homework, often accompanied by the sadness that lingers in our house, it was especially hard to be away.

so i reached for my holy salvation: the plainly-named “Baked Macaroni and Cheese,” ala page 200. it’s a cheesy-buttery bath stirred round and through tubes of wide-mouthed pasta, each tube filling with ooze as much as being wrapped in it. it vies, in our house, with bread pudding, as the neck-and-neck nos. 1 and 2 comforts on a spoon.

over the years, the making it — for me, anyway — is as soothing as it must be for my boys to polish it off in one sitting. assembling its components — the butter, the cheddar, the flour, the milk, the salt, paprika, bread crumbs, and parmesan shavings to finish it off — i slip into priestess mode. my old black cookstove — an industrial-grade contraption that somehow slipped into this old house in the 1970s, never to be removed — is my altar.

i begin my incantations and prestidigitations right there, where the flame is cranked, and the concoctions in my pots begin to bubble, not unlike vats of heavenly potions. with the oven cranked to 375, the kitchen begins to warm. everything about this kitchen ritual is warming. soon, my old sweater is off, and as i stir i imagine my sweet boy coming home to find the big white ceramic souffle dish perched atop the stove, my hand-scribbled note just to the side.

is there a more certain way to say i love you than to have cooked all afternoon? to have reached for the cookery shelf and pulled out the one thing a kid asks for on those nights when his sleepy head hits the pillow but the worries won’t be extinguished?

because a big old vat of mac n’ cheese wasn’t enough, not on this particular day, in the thick of this particular passage, i pulled out the produce bin and piled a mound of apples atop the cutting board. i chopped honeycrisp and granny smith, i didn’t peel — why bother? — and i tumbled the slices into the pot, added a splash of honeycrisp cider, a shake or two of cinnamon, and once again, applied flame to the equation. wasn’t long till the whole house was swimming in eau de apple and buttery-cheese. even the cat ambled back in from the garden.

then i set the table. is there anything that says i was thinking of you quite so quietly, certainly, as coming home to a kitchen table that awaits you, that has your very own napkin and napkin ring at the place where you always sit?

it’s the rhythms we carve into the grain of the day, of the months and the years — simple rhythms, unadorned rhythms, nothing so fancy as a napkin and fork at a place that is yours, set by someone who thought about how it might be to come home harried, and worried, and tired to the bone — that makes coming home feel as if someone just handed you your oldest, comfiest slippers. and a fuzzy sweater to boot.

i’d left the stove light on, and the mac-and-cheese under a foil dome, as i slipped out the door and turned the key. then, not a block from home, i got a message: the soccer player had decided, after all, to skip coming home. he’d hang out with the soccer team, inhale store-bought pasta and delivery pizza.

such is a mama’s existence.

so much for stirring and chopping, in hot pursuit of healing a tattered heart.

but here’s the holy truth: i was the one whose heart was soothed in the long hours of love at the cookstove.

and, besides, mac-n-cheese cold makes for excellent bedtime snack. when the lights go out at midnight.

red bird pie: a recipe of courage

perhaps its name is misguided, a culinary blunder nearly as stark as the dough with the mind of its own.

perhaps in calling it red bird pie, instead of the more ingredient-precise — say, peeled-granny-smith-with-occasional-appleseed pie — i’ve sent you and your brain cells tumbling down the very wrong path. perhaps you envision a meat pie. a pie filled with bird. i can’t even bring myself to type “red bird” when typing in this particular vein. for that would be a slaughterous pie, and we’ll have none of that here, not in this teetering-on-greens-only house.

it’s all just poetry, the poetry of pie naming. and once i discovered i could play with my pie dough, could press my old tin cutter, a wee red-bird cutter, you see, well, i was suddenly in joyful terrain. i pressed and i lifted and plopped. i was going gaga for the red birds i pressed in my pie top.

and deserving was i of this romp and reckless dough-cutting. for it had been a long way to red bird.

and thus is the story of the red bird of courage.

you see, as long as i’ve been alive i remember the words of my mama: “i’m afraid of pie dough,” she once said (though the minute i type that, i expect the phone to ring and denial to ring out across the land). for the sake of maternal peacemaking, let’s just say that someone once uttered the words, pie dough = fear, and they stuck.

if my forebears in the kitchen were fearful of dough, well, then, i too held ancestral right to be fearful.

so, all these years, i’d never done it. not until the day before yesterday, that is. the day before thanksgiving 2014, the day my dough dread crumbled. and the red bird rose to my rescue, served as my bent-tin medal of courage.

it so happens that this happens to be my season of conquering fear. and one of the very last bastions was the one splayed across the now flour-streaked pages — clear from page 24 to far yonder 44, a full 20 sheafs of schooling in butter + flour + water! no wonder i shook in my tattered-and-splattered over-head apron!

i’d turned in my hour of fear-mounting to “the hoosier mama book of pie,” a nestled-to-the-bosom book of pie tutelage if ever there was (though ms. paula haney, the hoosier mama herself, does seem to revel in raising the rolling pin higher and higher with each and every pie-baking instruction).

why, before the day was done — and it was a long one — i would have fumbled my way through these fine kitchen verbs: i macerated. i reduced. and i chilled. i would have pulsed, but the food processor also is among the kitchen wares i dread (or simply hate to haul from the pantry shelf), so i rocked with old-fashioned half-moon pastry cutter. i sprinkled “crust dust” (who knew?). and before i’d so much as frozen the butter, i’d stalked the grocery store shelves in search of tapioca starch. (i went with minute tapioca. oh, well. chalk it up to kitchen transgression.)

apparently, i’m not so good with numbers, either. at least not when it comes to butter. i grabbed two sticks, but promptly forgot that the wee little fraction tucked alongside the 1, there in the ingredient roster, spelled out 3/4 — as in less than a whole, as in fraction of buttery stick. so my virgin voyage of pie dough had an 2 extra Tbsps. of land o’ lakes unsalted butter.

you might wonder why if i started this whole rigamarole at 2 in the afternoon, i didn’t pull that ol’ bird-pocked pie from the oven till half past 10 in the night? well, it seems ms. hoosier mama believes in slow baking. meaning every step was punctuated with full stop — freeze for 20 minutes, rest for 20, macerate at least 25, drain for 25, chill for 20, freeze for yet another 20; 130 full minutes of pause, pause and more pause.

in which, i suppose, the ponderous baker is supposed to deep breathe the wonders of all this mindful attention to butter and flour and water laced with red wine vinegar (the better the chances to shorten the protein strands, ms. haney explains, the ones that make your pie dough tough to the tooth).

seeing as this was my first run-through, i more or less sighed deep sighs of exasperation at each and every prescription to pause. by dinner time, when everyone’s tummy was growling, and i was still pausing to freeze or to drain, i’d gotten to calling this “apple pie interruptus,” for the way i seemed to take two steps fore and one step to the side.

and i flubbed plenty along the way: besides the mistake with my buttery math, and despite the fun i had thwopping the cold ball of dough with the girth of the rolling pin (lest all the rolling toughen it into one hard-bitten bird), my dough circles never did reveal themselves (more like a raggedy-edged oblong was the best i could do).

so i did what any self-respecting virgin pie baker would do: i scrimped. scraped the doodads of dough right off the cutting board. dabbed droplets of water there at the seam, where dough met dough, and i made like a band-aid.

and then, at last, i got to the side note, the one about cutting to vent, and that’s where all my years of flipping glossy pages in foodie tomes came to bear: i plundered my mostly-unused-but-abundant collection of old cookie cutters, and there, at the way bottom of the basket, lay a toppled wee red bird.

and that’s how i wound up reveling in pie dough, just before the 10 o’clock news. i pressed myself a whole flock of dough birds. i had red bird holes in my pie top. and red bird doodads of dough, rising up to a second dough layer. i had so very much fun with my birds i barely noticed the disastrous crimp to my crust. nor did i mind the splotches of dough bandage.

which leads me to think that, as with all acts of courage, the recipe reads something like this: shove up your shirt sleeves, take it one step at a time, don’t flog yourself for dumb mistakes and necessary U-turns, and let rip when it comes to the part where you’re in your glory.

in the end, does anyone other than you give two whits that you’ve mastered the thing that you feared?

but once you find yourself grabbing the hot pads and oven mitts, and you’re yanking your prize from the sizzling oven rack, all you need do is deep breathe the truth that, step by step, blunder upon blunder, you’ve inched your way over and across the very terrain that once made you tremble.

life is like that. pie-baking is too.

it came over me as if i’d been out on a splintering raft in the middle of the swallowing seas, as if for days and days i’d not seen dry shore. nor steady mooring to cling to. but there, not too far out of my reach, was the sea-battered timber planted in the sandy bottom. the end post of a barnacle-crusted dock i couldn’t quite make out, and it came out of nowhere.

looked like hope to me.

so i reached for it. reached into the meat bin at the bottom of the fridge. hauled out the pack of cubes of cow (so sorry, cow). then i hauled out the cook pot, the one so hefty it could break a toe. a pack of toes. i glopped in a spill of oil, olive oil slick across the now-sizzling surface. and in plopped the cubes of beef. i browned and hummed. that’s what cooking on a thursday morning does.

i was burrowing into the holiness, the sacrament of middle-of-the-week, because-they-need-it, because-we-all-need-it supper. it would be ladled at long day’s end, when, for a moment, hands would be clasped, prayers raised, then forks. and a certain emptiness, filled.

that’s the mystery and alchemy of all-day puttering at the cookstove. it’s the only thing some days, some weeks, that beelines to the crannies in our heart where words can’t go. that seeps into hollows hungry for so very much.

since this was sacramental, after all, i set the altar while beef cubes sizzled: old chipped blue willow plates, ratty napkins that could use a spin through the sewing machine. cobalt glasses, ones that all day long catch the light, spill streams of blue across the old maple planks of the handed-down kitchen table, the one that still wears the imprint of third-grade homework from back in 1965 (or so i calculate, judging by the particular child’s scrawl and the certain words pressed into the wood).

sacramentum, the latin dictionary tells us, means “sign of the sacred.” is it sacrilegious, then, to call a plain old supper, one that simmered on the back burner all day long, one thought through, from splattered sheaf of follow-along instructions, clear through to pop-from-a-tube biscuits, is it sacrilegious to call a lump of root vegetables and beef, ones swimming all day long in thyme and bay leaf, crushed tomatoes with a splash of red wine vinegar, is it sacrilegious to call it sacramental?

i think not.

to serve up what amounts to depths of heart, to say in mashed potatoes and irish butter, “i love you dearly, and i’m so sorry i’ve been distracted. so sorry i’ve been heating up old soup, chicken pot pie from a box.” to say, with store-bought pumpkin pie, under a swirl of canned whipped cream (i splurged on the one that shouted, “extra creamy!”), “forgive me for making it seem like something else might have been more top-of-the-to-do-list than carving out the holy half hour (let’s not be greedy here) when we all sit down and savor pay-attention cooking. and each other.”

because, really, i think we can taste the difference. oh, umami is umami. and sweet is sweet. but don’t the hours of stirring, of simmering, of thinking something through — not whipping it off in the last 10 minutes before the hunger sirens screech — doesn’t it all find its way deep down into the deliciousness that doesn’t come through short cut piled atop short cut?

yesterday, the day was afghan autumnal, all gray and woolly, the sort of day when you hunker inside, when the cookstove yodels to you. when the burners itch to be cranked. and the bins of rutabaga and turnip and parsnip — all those underground offerings that soak up what the earth’s deep dark soil has to share — they beg for vegetable peeler, and chopping block, and long hours surrendering to flame.

it was the sort of day-after-hubbub when quiet invited me in for a long slow visit. nothing rushed about the day. a day to breathe deep, breathe slow. to fill my lungs with quiet prayers, the prayers of lavishing love on the ones so dear to me, the ones who deserve nothing less than the very best dinner i could chop and stir and taste-test along the way. and while i’m at it, why not take it up a zany notch? just because there’s never enough oomph in an ordinary day. and what day, really, deserves to be plain old ordinary?

by supper time, when the tableau beyond the panes of glass went inky black, when the glow of the kitchen lamp spilled gold across the table, the vapors that rose from the big red smash-your-toes cook pot, the hot breaths that trespassed out of the oven, they crept up the stairs to where homework was being done.

before i’d said a word, the stovetop’s incense was deep at work. the house was filled with something surely holy, for what else can you call it when you claim a whole long day to aim for higher?

to say in smell and taste and temperature and touch what words alone just might not say: “you are worth it to me to spend a whole day cooking, just for you. i’ve not lost sight of my holiest calling, to carve out a hallowed space here in this place of walls and windows and creaky floors and solid roof, to be the one reliable source of all that’s good, that’s edifying. to fill you with warm spoonfuls — as much as you want, there’s plenty here. and i’ve made it beautiful because you are, because beauty speaks to the deep-down whole of us. and you so richly deserve each and every morsel i can muster.”

the day was chilly brisk. i did what i could to make the kitchen glow, the holy light of heaven here on earth. and to fill those who came to the chairs at long day’s end.

far as i can tell, that’s a sacrament, a sign of the sacred. with a fat splat of butter drooling off the plate.

like all the best recipes, i start with something on paper, and then i riff. i zig when instructions say zag. add a dollop instead of a dab. the beef stew recipe i’ve decided is the one worthy of a long day’s cooking is one from that gloriously down-to-earth pioneer woman, ree drummond, and it’s one she calls “sunday night stew.” even on a thursday.

fat ‘n’ sassy: measuring joy in micrometres

it doesn’t take much. never really does. the end-game, though, is everything: the skip in the heart when sweet leaflets of joy come wafting down from the clouds.

and so it was with the blueberry basket. i was paying little mind, going about the motions of putting food to the plate, en route to the mouth, at last to the tummy. i reached in the cold box that keeps these modern conveniences — and here i wonder, are we losing something, relying on refrigeration instead of plucking them straight from the bush? so early, and already so distractible, i am…

anyway, i was mentioning the cold box, the ice box, in my grandma’s vernacular, the one that keeps those little globes of summer from going flat, like old tires on a bicycle that’s not been ridden in months. i reached and grabbed the berry basket, the one hauled home from the store, alas not the farmer’s field.

i started to pour, to dump the blue balls of summer and that’s when i noticed: these were blueberries at their most swollen, blueberries who’d pushed out their skins to the point of near bursting, and then pumped the insides with that delectable potion of sweet-tart-and-pucker. these were blueberries fat ‘n’ sassy and filled with pizazz.

and so it was, at that very moment, that i felt my heart do a bit of a double-beat.

sometimes, that’s all it takes: joy measured in micrometres. a dimension the science books tell me is used in measuring infrared radiation wavelengths, the diameter of wool fibers, and the heft of cells and bacteria. human hair, you might wish to know, measures in at some 90 micrometres (the spelling of the international bureau of weights and measures, as opposed to the ingrained auto-correct that keeps slapping my hand, trying to get me to flip my “r” and my “e,” to do away with this british affectation of science). there’s a fancy abbreviation for micrometre/micrometer, but most keyboards can’t fathom it, so among common folk, the abbreviation is “um,” as in that ungodly pause when we’re fishing for words. a water droplet of fog, for instance — yes, they measure these things (though not necessarily with yardstick) — is sized up at roughly 10 to 15 ums.

but back to the blueberries, near doubled in girth, in micrometres. a measuring tape slapped round their middles right now, at the height of summer’s rising crescendo, when the cicadas start rubbing their parts, their noise-maker parts, and the hum of near august vibrates into the night, it might make a Vaccinium corymbosum (or highbush blueberry) blush with indigo pride. they’re packin’ a wallop right now.

and that’s all it took. that one increment of immeasurable heart tickle, it was all the delight i needed to add a skip to my summery morning. the air out the window was cool, northern-michigan cool. the berries in my bowl were zaftig. the day had nowhere to go but skittering southward. i’d reached the glory spot before my coffee had cooled one joule (dipping back into the annals of science, we pull out the word for a standard measure of heat energy, or thermodynamics).

with all these berries inflated to seasonal highs, i reckon, it must be time to crank the oven and beckon the boy in this house whose favorite page of mark bittman’s how to cook everything: simple recipes for great food (macmillan, 1998) is the one that’s splattered with smeared bits of butter and very old droplets of egg white (more than 10 to 15 ums, i assure you). the boy, now asleep in his bed, dreams day and night of blueberry cobbler, the dish he calls his finest (never mind only) baking hour.

it goes something like this, and it’s more than worthy of those fat sassy globes that define summer at its puckeriest.

blueberry cobbler

yield: 6 to 8 servings

provenance: mark bittman’s dear friend john willoughby, who found it in a southern boardinghouse, so you know it must be lip-smackin’ good.

4 to 6 cups blueberries, washed and well dried.

1 cup sugar, or to taste

8 Tbsps. (1 stick) cold unsalted butter, cut into bits, plus some for greasing the pan

1/2 cup all purpose flour

1/2 tsp. baking powder

pinch salt

1 egg

1/2 tsp. vanilla extract

1. preheat the oven to 375 degrees Fahrenheit. Toss fruit with half the sugar, and dump in lightly buttered 8-inch square or 9-inch round baking pan.

2. combine flour, baking powder, salt and 1/2 cup sugar in food processor, and pulse once or twice (or, simply mix in a bowl, the old-fashioned way, with big spoon and muscle power). add butter and process for 10 seconds, or old-fashioned way, cut into flour-sugar mixture with pastry cutter or two knives, crisscrossing through the mound. by hand, beat in the egg and vanilla.

3. drop this mixture onto the fruit by tablespoonfuls; do not spread it out. bake until golden yellow and just starting to brown, 35 to 40 minutes. dollop onto plates. please wait for joules to dissipate, or you’re apt to burn your tongue.

savor under the summer night’s star-stitched sky. or as sweet spot to your morning’s coffee.

a wee bit of housekeeping: if you peek up above, to the few bold words under the title “pull up a chair,” you might notice there’s a new line, “the book: slowing time,” which means there’s a new place to poke around here at the table. seeing as this blessed book, Slowing Time: Seeing the Sacred Outside Your Kitchen Door (Abingdon Press, October 2014), is rolling toward the printing press any week now, and seeing as the real live bound galley arrived in a pouch on my front stoop last night, it seems high time to give Slowing Time its very own place to call home here where it all began. you’ll find a few bits of news, some very kind words that have rolled in under the transom in the last week or so, and whatever else you might care to know in the book department. click here to peek.

summer’s succulence

it’s the morning after the night exploded.

it’s gentle out now. the pop and fizzle are long gone, replaced by mama wren singing. and mr. and mrs. cardinal chattering, as they imbibe on the annual inebriating feast of plump purple serviceberries, dangling from the bough.

i’m inhaling all of it, as i try for one short spell to push away the worries, the deadlines, the cobwebs in the corners.

this is what summer is for, the reason it exists: to catch the rhythm of your breath, to notice how it flows in time with tide, with water gurgling toward the lakeshore sands, then rolling out again.

this is a day for slicing watermelon, for scooping little balls of sweetness from soft and juicy flesh. for popping back blueberries by the fistful. for paper napkins catching all that dribbles — because you’d never get the fruity stains out of cotton squares or linen.

this just might be a day for cranking up the oven. and the grill, of course. but one short blast of cake baking just might be what the declaration of independence does declare.

because it’s a holiday, because we’re practicing the art of stepping out of time, and into the hallowed hollows of timelessness, i’m making like this here is a backyard with picket fence, and i’m leaning across the fence to hand you a recipe for the finest chocolate cake this side of the iowa state fair.

a dear college friend drove down from wisconsin a week or so ago, with a sheet pan of devilish deliciousness and the spelled-out recipe to boot. she left the whole darn cake when she packed up to head back north, and my boys declared it the finest chocolate cake they’d ever slipped between their lips.

with no more hoopla, and one sweet promise: here’s a slice of delicious summer’s succulence, brought to you courtesy of judy smith, who was motored here by one maureen haggerty warmuth. they’re two of the treasures i’ve held onto from my college days. and here’s the treasure to tuck inside your banged-up, battered, much-used tin of recipes. (fact is, this is all-season’s succulence, but since we’re at the fever-pitch of summer, we’ll tag it one for summer’s glory. seems just the thing to ferry to the independence day cake stand.)

minnesota chocolate cake

provenance: my friend judy smith’s dear friend tammi baumann

2 cups flour

1-3/4 cups sugar

1/2 cup cocoa

1 tsp. salt

1 Tbsp. baking soda

ADD:

1 cup buttermilk

1 egg, slightly beaten

2/3 cup oil

1 tsp. vanilla

1 cup coffee brewed

Preheat oven to 350 degrees Fahrenheit.

Beat together your litany of ingredients — batter will be runny.

Pour into greased and floured 9-by-13 pan. Bake at 350 degrees for 30 to 40 minutes.

frosting:

In saucepan, dump:

1 cup sugar

3 Tbsp. corn starch

1/2 tsp. salt

4 Tbsp. cocoa

1 cup boiling water

Cook over medium heat while stirring, till thickened.

Remove from heat, and ADD:

1 tsp. vanilla

3 Tbsp. butter

Cool frosting and pour over cake.

grab fork. dig in. declare this a day for summer’s succulent sweetness — in all its many flavors.

p.s. there was a rumor wafting about the kitchen that this chocolate-y deliciousness might have won blue ribbon at one of those fine midwestern country fairs. fact or fiction, it won just such an honor here in our humble kitchen. so pinned by the boys who left not a crumb behind on the cake plate…

beef stew matters

beef stew

a confession: all week i’ve been considering the fine points of stew. i’ve pondered the layering of flavorful notes. ruminated over anchovies. weighed root vegetables. detailed the pluses of rutabaga, countered with low points of turnip. i’ve dwelled on umami, that quixotic elixir we’re all after.

i’ve settled at last on a roadmap. any hour now, i’ll be cranking the flame, putting grass-fed beef chunks to the iron-hot scald of my three-thousand-pound cook pot. it’s what you do when you want a fine stew.

now this stew won’t be spooned to anyone’s mouth — not unless you count the teaspoons i’ll taste as i stir and i fiddle — till saturday’s eve. and that’s the whole point. i want the whole universe contained in my pot to cross-pollinate, to send ambassadorial missions from, say, the rings of the leek to the eye of anchovy (do those little squirmers have eyes? i’ll soon know the answer, once i peel back the lid and give them a look-see). i want a marriage — not a divorce — of fine flavor. i want the chunk of the beef to waltz with the dice of the carrot.

why, you might wonder, am i plopping my self into such a pressure-packed cooker? why in the world does this simple potage so very much matter?

take your pick:

a.) a wintry stew, served to a hungry tableau, is the raison d’être of this season of ice and blustery winds and bone-chilling temps that makes us ponder the wisdom of bears who pack it all up and go under cover from, say, the thanksgiving feast till the rising of easter.

b.) i quake in fear of that hushed moment when forks put to mouths lead to the audible verdict. i’ve sat there before when only after a pause does some polite — and half-hearted voice — pipe up with a “oh, this is good.” or, worse: not a word.

truth be told — and we’re truth-tellers here — it’s b more than anything that has me engaged. cooking for me is not just a dalliance, not a way to whittle away a few friday afternoon hours. no, cooking for me is self-taught survival.

i am still, after all these decades, battling away demons you’d maybe not notice. did you know, for instance, how much pride i felt when i typed out the sentence about tasting spoonfuls? i’ve promised myself — as i’ve made so many promises before — that i will taste as i stir. that doesn’t sound one bit scary to you, i imagine. but it does to me. and it’s why that moment of fork-to-mouth, that very first taste at a table of people i love or especially a table of folks i don’t know too well, has at times left me feeling as if the chair’s been pulled out from under me. all these years i’ve cooked by feel, cooked without tasting — a veritable braille at the cookstove — and i don’t know till everyone else does if i’ve over-walloped the salt, or short-changed the wine.

but that was then, and this is now. i am nudging myself into a new chapter. i am filling my table with people i love, and a few who i only scantily know. i am a living-breathing believer in the power of putting ideas to the world, and the best place that i know for birthing fine thought, for bridging frames of reference, is the dinner table.

it’s curious, perhaps, that i invest so much faith in the gathering of great good souls to my table. but the way i see it, the dinner table is merely the classroom, the seminar chamber, set with knives, forks and a battalion of glassware.

so, if you want to bring together great stews of ideas, of stories, of wisdom, of light, you need to stoke the flame with the richest, most sublime assemblage of feast and drink and, yes, a darn lovely haul from the old plate collection.

it’s why i’ve been turning to my panel of master teachers, all lined up on the shelves of my kitchen — and a few who walk and talk and dispense real-life secrets. it’s why i am hurling martha stewart across the room, but sidling up to david tanis, a generous-hearted cook (formerly of chez panisse and a regular in the new york times, for heaven’s sake) endowed with a down-to-earth soul who finds perfection in a simple soft-boiled egg and who writes that the peeling of carrots and onions for a simple stew “can be meditative.”

it’s not about wow-ing. it’s about allowing the feast to speak for the part of my heart and my soul that breathes beyond words.

the equation i’m after, the blueprint i seek, is one that’s infused with humility, yet banks on the notion that dolloping grace and deliciousness — both in measures sublime — onto my table is bound to spiral the talk a notch or two, and kindle the room with a shared sense of the sacred: this table matters, what unfolds here is sacramental; and as the one who’s done the gathering, i’ve infused it with the very best i could muster.

i’m finding my way. even at this late date in the game. and, any moment now, i’ll be feeling my way — and tasting my way — to a beef stew that matters. perhaps, more than it should. but not really, not when you know all that’s infused in its making.

here’s the roadmap i’m more or less following, a revamping from two solid sources: food52, that amazing online kitchen of amanda hesser and friends, and the pioneer woman, who has proven herself to stand on two solid legs when it comes to the cookstove.

My Secret Ingredient Pioneer Woman Saturday Night Beef Stew

Ingredients

STEW:

2 Tablespoons Olive Oil

3 pounds Beef Stew Meat (chuck Roast Cut Into Chunks)

Salt And Pepper

1 whole Medium Onion, Diced

2 Leeks, sliced

7 cloves Garlic, Minced

2 carrots, peeled and chopped

1 package (8 oz.) Baby Bella Mushrooms

6 ounces, weight Tomato Paste

2 Anchovies

Dried Porcini Mushrooms (1/2 ounce; Melissa’s packet)

4 cups Low Sodium Beef Stock Or Broth, More If Needed For Thinning

1/2 cup Red Wine Vinegar

1 cup canned whole Tomatoes with Juice (or 1 can)

1-1/2 teaspoons salt

2 Bay leaves

3/4 teaspoon dried thyme

2 whole Carrots, Peeled And Diced

1 whole Turnips, Peeled And Diced

1/2 Rutabaga

1 Parsnip

Pearl Onions, frozen; about a cup.

1/3 cup to 2 Tablespoons Minced Fresh Parsley

MASHED POTATOES:

5 pounds Russet Potatoes (peeled)

1 package (8 Ounce) Cream Cheese, Softened

1 stick Butter, Softened

1/2 cup Half-and-Half

Salt And Pepper, to taste

Preparation Instructions:

Pat dry, then salt and pepper stew meat. Heat olive oil in a large, heavy pot over medium-high heat. Brown 1/3 the stew meat until the outside gets nice and brown, about 2 minutes. (Turn it as it browns.) Remove the meat from the pot with a slotted spoon and put it on a plate. Add the rest of the meat, in thirds, to the pot and brown it, too. Remove it to the same plate. Set the meat aside.

Add the leeks, onion and garlic to the pot, stirring it to coat it in all the brown bits in the bottom of the pot. Cook for two minutes, then add the carrots and mushrooms and again, cook for a few minutes. Add tomato paste AND ANCHOVIES to the pot. Stir it into the alliums and vegetables and let it cook for two more minutes.

Meanwhile soak dried Porcini mushrooms in 1 cup warm water.

Add wine vinegar, tomatoes with juice.

Pour in the beef stock, stirring constantly. Add salt, bay leaf and thyme, bring to boil. Stir in porcini mushrooms; then add beef back to the pot, cover the pot, and reduce the heat to low. Simmer, covered, for 1 1/2 hours to 2 hours.

After 1 1/2 to 2 hours, add the diced turnips and carrots AND RUTABAGA AND PARSNIP to the pot. Stir to combine, put the lid back on the pot, and let it simmer for another 45 minutes to 1 hour. The sauce should be very thick, but if it seems overly so, splash in some beef broth until it thins it up enough. Feel free to add beef broth as needed!

When the ROOT VEGETABLES are tender, stir in minced parsley. Taste and add salt and pepper as needed. Cool to room temperature. Refrigerate.

When cool, skim off much of the fat from the top. Reheat over low heat, letting the stew simmer 45 minutes to 1 hour before serving.

Serve piping hot in a bowl with mashed potatoes, letting the juice run all over everything. Mix in half of the parsley and garnish with the rest. Sprinkle with extra minced parsley at the end.

MASHED POTATOES:

Cut the potatoes into quarters and cover with water in a large pot. Boil until potatoes are fork tender, about 25-30 minutes. Drain the potatoes, then put them back into the same pot. With the heat on low, mash the potatoes for 2 to 3 minutes to release as much steam as possible.

Turn off heat, then add cream cheese, butter, cream, seasoned salt, salt and pepper. Taste and adjust seasonings as needed.

Serve potatoes immediately or spread them into a buttered baking dish to be reheated later. To reheat, put them in a 375 degree oven, covered in foil, until hot.

it’s a scary thing to write as open-heartedly and honestly as i just did. but sometimes when i’m sitting here at the old maple table, i consider the connection we’ve all forged over the years, and i reach for the bottle of truth serum and swallow a spoonful. i feel like i owe it to the chairs, to not just write some mamby-pamby distraction about how i’ve whiled away a week, but rather, if you’re going to take the time to put eyes to these words, you deserve a dose of courage. it’s especially scary to tiptoe into this realm when i know my mothers — my own mama and my mother-in-law whom i adore (along with my father-in-law) — are among the readers. but when you write from the heart, you’ve made a commitment to not pussyfoot around. you straight shoot even when it makes you tremble. if you believe in authenticity — and i do — there’s only one path up the mountain. and it sometimes gives me the shakes. but in the long run, i just might find my way. and look out from that long-awaited vista.

awash in grace

potpieon a cold winter’s night, after a long day in the hollows and dim-lit caverns of a hospital, where the smells are of ether, and the blinking and beeping and red-letter alarms leave you jangled and cored. on a cold winter’s night when your breath freezes in clouds as it puffs from your mouth and your nose, on a night as inky black and icy as that, there is nothing quite so heavenly fine as flicking on the lights to your dark old house, your empty house, and just as you’re beginning to stir about the kitchen, eager to feed your hungry, tired, shoved-aside child, suddenly the doorbell rings.

and there, wearing potholders as mittens, is your rock-of-gibraltar across-the-street neighbor and most blessed friend, a woman who since the night you moved in nearly 11 years ago has defined the art of being there. she is bearing hot-from-the-oven from-scratch chicken pot pie, comfort food enshrined in pyrex, comfort food the way the gods must have first dreamed it.

she is there with hot feathery islands of biscuit, floating atop an ocean of white-meat chicken and succulent broth. she’s chopped carrots, tossed in handfuls of garden peas and knobby pearl onions. she’s laced it with herbs snipped from her winter garden. and, as she stands there, ferrying the feast from the arctic blast at the door to the kitchen counter that moments ago had looked so forlorn, so empty, so begging for food, you feel a healing ooze deep down inside, deep down to where you hadn’t even realized it had all been emptied out.

only, suddenly, with this rock-solid, infinitely un-wobbable woman standing there, you realize that for the very first time all day you are leaning on someone, literally sagging your whole weight against her. you are breathing, exhale and inhale. you’ve just let out all your cares and your worries, your deep-down, tucked-away fear from that one awful moment when the breathing machine let out its shrill alarm of a warning. you have let it — all of it — whoosh right out of you, and as you lean into her sturdy down-coated self, you realize you are utterly, deeply letting her keep you upright. and she is providing.

and that’s how it is in those rare moments of grace, when the angels among us reveal their holy selves. when we are fed. when we are soothed. when we are reminded we needn’t bear it all by our lonesome, whatever it is that needs bearing.

and there is something especially otherworldly about the communion that comes with feeding, being fed, putting fork to lips, tasting deliciousness, feeling that warm lump slide down to the depths of our belly. it is surely sacramental. i’m guessing it’s why manna fell from the heavens, and not washcloths or soles for desert-worn sandals.

there are scant few times in our lives when we are so deeply hollowed. when we’ve been holding our breath for hours and days. might as well have been months. and someone arrives bearing food — that sustenance that takes flight where words fall off the cliff.

i remember those meals, will forever remember those meals, meals that bring me to tears, so deep a place did each of them feed me:  the salad brought to my hospital bedside, complete with china bowl, and silver fork and knife, after my belly had been sliced side to side, and i’d felt so emptied. the hot chicken pot pie ushered in with the arctic draft at my door the night before last.

these are the kindnesses, the graces, that serve as angel wings, that literally lift us and carry us. that prop up our wobbly selves before we fall splat on our faces.

this week has been a week of being awash in grace. every bend in a hospital hallway seemed to bring an unexpected, unscripted angel. the dear old man who ushered my brother and i from the waiting room to the tiny cubicle where my poor mama lay, caught in that netherworld of anesthesia and age. where she somehow mustered the presence of mind to lift her ring finger from amid all the tubes, and ask, scratchily, “can i have my rings back?” for they’d made her take off her wedding rings — hers and my papa’s — hers, for the first time since she’d slipped on that thick gold band back in october of 1954, nearly 60 years on her finger, that ring.

there was the kind-hearted friend who barely heard word of my mama’s surgery and wasted no time dropping off a plush polka-dot blanket, one lined in cardinal red. one that kept me wrapped while i waited, and now keeps my mama wrapped on the long hospital nights.

another cardinal-loving soulmate sent along a teapot painted with the scarlet-feathered breath-taker my mama taught me to love, the one i always think of as hope on a wing. in a gesture of kitchen sisterhood that melts me, two dear friends are huddling together at a cookstove tomorrow, and together whipping up a saturday night feast for me and the next brother who’s flying in to town.

the brother who drove five hours to be here. the one flying in now from faraway maine. the two even farther away who’ve been calling and texting as if we’re all on a string connected to juice cans.

weeks like this one remind you that deep down we don’t ever go it alone. angels huddle and plot out the game plan. whose kindness will come just when it’s needed. whose understanding — without words — will ease you over the hump.

the acts of compassion are infinite. their depth is immeasurable. they’re as essential as oxygen, as unexpected as lightning bolts in a winter’s storm. they keep us from withering. they take up the load that might otherwise grind us into swept-away piles of dust.

bless them, each and every one, through and through and forever.

dear chairs, i type through bleary braincells. and can barely wrap words around thoughts. i’m keeping one eye on the clock, on the arrival of u.s. airways flight 1991, carrying my beloved brother. the chair turned seven yesterday, 12.12. the chair seems to have grown into one of those gathering grounds for angels, who ALWAYS keep me propped upright. love to all. i’m off to the airport. xoxox

make-believe b & b

if you put your ear to the floorboards around this old house, you might pick up a hum. a particular hum. a hum that’s more like a purr. (it would be found amidst the gnarling and churning that comes with waiting for news, editor news.)

that hum, i’ve come to determine, is the purr of an innkeeper in the making. a girl who makes believe she’s running the best sort of b & b. not one for money, but one for pure love. in recent weeks, we’ve had a long and sumptuous string of company. company of the very best kind: overnight, nestling deep into the morning. sometimes, day upon day.

overnight company affords moments that in-and-out company does not. overnight company affords these things: curling under a blanket, on the couch, as the stars turn on, burn deep into the night; ferrying trays of coffee and cream and wee little vases of wee little blossoms up to the bedroom door; settling in for long conversation that courses through the homework hour, as you practice the fine art of juggling your math tutoring skills along with your conversational curiosities. overnight company makes a wednesday night prestidigitate into the feel of the night before christmas.

overnight company is being wrapped in angora threads, throwing the blanket of friendship across both of your backs — yours and that of your overnight friend — and each of you pulling tight on your end of the threads.

overnight company allows for slow unspooling inspection of every last inch of the heart and the soul. or at least a good hearty guffaw deep in the hours of darkness. and, sometimes, a revelation or three.

because home is the wellspring of my heart, welcoming people i love into these chambers is the highest art in the art known as hospitality, a word with 14th-century roots, one that wends its way through old french and on into latin, where it’s derived from hospes, “guest,” and has come to mean “friendliness to guests,” (or if you mis-read as i first did, friendliness to ghosts. egad).

it’s the french knots and tiny twists embroidered into the course of the stay — be it a mere 18 hours, or as long as five days or even (gasp) two weeks. it’s filling the fridge and the pantry with the very deliciousness a particular friend savors, a secret you know because you’ve spent the years of your friendship paying attention. it’s stacking fluffy towels on the broad-lapped armchair, and punctuating the stack with a dark-chocolate sweet, and a french herbal soap. it’s tucking a water bottle and a vase of bright blooms at the bedside, because you’re aiming for beauty and full-throttle comfort, and stumbling in the dark for a drink in the night is hard on the toes and no fun, besides. it’s planning a dinner that’s at once unassuming and deeply satisfying, one that’s best if slow-cooked and accomplice to the trick of filling the house with wafting clouds of garden-clipped herbs and spices and fruits of the season.

it’s waiting at the train station. or driving into the city to fetch your overnight visitor. it’s clearing the deck for as much or as little conversation as the friend has hours or inclination.

it’s the blessing of hearing the footsteps from overhead as you’re down in the pre-dawn kitchen, slicing pumpkin-y bread, and popping the garnet-jeweled seeds out of the pomegranate’s oozing belly. it’s knowing the next face you see coming round the bend is one you’ll never get enough of. and there, over early morning swirl of caffeine, you begin the day, emboldened by this rare gift of starting the hours together.

over the years i’ve learned that i’m far more inclined toward one-on-one conversation. will take a tete-a-tete over a horde any old day. give me deep. never mind a room that’s buzzing with noise.

i savor a conversation that doesn’t drown out the tick or the tock of a clock in the next room over, a conversation that allows the pauses to speak as robustly, as tellingly, as the pop and the sizzle of the words. i am drawn to burrowing, deep in the heart, as well as under the deep stack of afghans tucked by the fire. and i find it best done in ones and twos.

it’s all the romance — and, really, the architecture — of friendship. of considering each and every sensory vessel a channel into the heart, into the endosperm of why we’re here in the first place: to find our shared thoughts, to hold our visions up to the light, to march in each other’s company, to hear the sound of our footsteps in tandem. to discover we’re not all alone. not always, anyway.

much of it comes, i’m certain, from my years curled up with fairy tales and picture-book pages. i was a dreamer early on, and always will be. maybe it comes from wanting so deeply to be tucked under the covers at night. or maybe it’s simply because the sound of a china teacup tinkling against a saucer or spoon, is a song that sings to my delicate heart. maybe it comes from knowing how enchanted it felt to be ushered into a wise woman’s greenhouse, one tucked at the back of a great gothic castle long long ago, and the crisp-edged memory of being served from a pitcher of fresh-squeezed orange juice and offered a plate of pepperidge farm buttery cookies, all dappled in afternoon sunlight. all whispering into my ear how very welcomed i was — how much i mattered — in that magical envelope of time and place.

or maybe it’s simply that i feel bound, sometimes, by the walls of my heart, and i turn to whole-body expression to tell the ones that i love just how deeply i love them: i cook for them, clean for them, tuck treats onto pillows or trays and carry it all to their door. i can’t always find all the words, so i wrap them in the swirl of all that i love.

it’s a bold hope that they won’t leave this old house without this knowing tucked in their heart: they are loved without bounds, forever and ever. amen.

coming home stirs deep appreciation. seeing through fresh eyes. as i wander about the house, sink back into the rhythms of living here, unfolding my day here, i find myself drawn, day after day, to particular sounds, particular light patterns. i open windows, just to flush the house with outside sounds. the chirping of the cardinals. the trill of someone else. i tiptoe into rooms, stand there, watching the way the sunlight plays through vines that have trespassed across the windows.

but more than anywhere, i am drawn, near suppertime each day, back to the old garland, my not-so-shiny stainless-steel dowager of a cookstove. she feeds us amply. she feeds me deeply.

i think of her, it appears, in the feminine — muscled, un-fancified, generous, forgiving.

weighty, she holds down the kitchen. she offers heat, flame at the turn of a knob. she is this old house’s heartbeat, and not just because of the click-click-click she sputters while the flame prepares to catch.

broad-lapped, with six burners and a grill top, she whispers no pretension. she was anchored here back in the 1970s, long before it dawned on anyone that an industrial-grade stove might belong amid a hungry family.

she was born to feed masses. and masses she did feed. first up, a family of seven, then a family that huddled three generations under this old roof. and for the last decade, merely us. with but two growing boys, i hardly feel deserving of her generous proportion, her capacity to provide. i’d always dreamed of a gaggle. but, as wise people sometimes say, God gives you what you can handle, and i suppose i was cut off after my lucky bookends, my eight-year span of boy.

so i up my ante through invitation. stay for dinner, i tell the little boys who wander by. the little boys with hand under cake dome, come three or four in the afternoon.

in recent afternoons, after long days reading and writing, i find myself stirring as the clock ticks toward five. i start poking around the fridge, seeing what’s available (or more often, what’s on the verge of wilting if i don’t use it maintenant). i eye the cutting board, and hear a beckoning. i’ve room aplenty, near acreage, it seems, after a year in the not-so-sprawling apartment kitchen. i’ve got my drawer of accoutrement again, a gaggle of whatchamahoojies and thingamabobs that help me get the job done. the cucumber peeler, the garlic crusher, the strawberry huller (a new addition, inspired by the little fellow who HATES a leafy cap adorning his juicy fruit and finds it a sport to sink in the hungry teeth of the huller and glide out the nettlesome middleparts).

after a year in which i confined cooking to a rare few nights (otherwise it was more along the lines of dumping trader joe’s oft-frozen magic in a skillet, and calling it dinner), i’ve rediscovered the therapeutic balm of chopping to the tune of NPR’s “all things considered.” although the syrian backbeat to the sauted apples last night proved a wrenching side dish.

i find i hum when cooking for my boys. and my old stove sings right along.

she and i, we’re quite a pair. she steams ahead where i stumble. tries not to scorch when i forget, get wooed away by the ringing telephone, let things blacken on the pot.

last night i was cooking merrily. whipped up all my little one’s favorites. straight through to baby peas in butter sauce, the fancy kind that come tucked inside a see-through pouch, one that bobbed along in boiling vat — deep-sea peas ensconced in thermal safety suit.

and, one by one, i was cooking for no one. the little one called to say he’d been invited out for dinner, and he was so so sorry, he really wished he could be there. then the tall fellow, the one now back to newspapering, he called from the chambers of city hall, whispering that he was elbow-deep in witnessing a landmark debate, and wouldn’t be rolling in till at least the 9 o’clock train.

no worry, no chagrin. i smiled at my cooktop, crowded with pans that were going nowhere. the buttered noodles with my grandma’s butter-bathed bread cubes, they were happily napping off to the right. the apple sausages swimming in cinnamon-spiked apple slices, they dozed. and the baby peas, ala jacques cousteau, they couldn’t have cared less.

by 10, the pots were cleared, their contents tucked in tupperware. no one had been around for the duet, me and my old stove. but that didn’t detract, not one iota, from the joyful percolating deep inside.

i was home, back at lady garland, and she and i twirled splendidly, all alone, entwined again.
