stirring sweetness

the beautiful thing about leaping into a religion that’s not your own, is there is no rule book.

well, there might be a tome or two on the shelves, but when you’re inventing, you often concoct as you go.

oh, sure you ask zillions of questions, you turn to the texts, pore over pages, searching for answers. but plenty of times, you go with the zeitgeist and, frankly, you wing it.

and so it was i bounded out of bed yesterday morn, on the dawn of the new year, rosh hashanah, and set out to make rosh hashanah bread pudding.

now, nowhere in the cookery books will you find such a sweet and pudding-y dish. there is no step-by-step guide to a sweeter morning than the usual cornflakes and cow’s milk.

ah, but like many a someone embracing something that’s new, that’s just a touch foreign, exotic, i can’t get enough.

give me a rosh hashanah prayer about morning stars and particles of dust floating on the wind, and i am swooning in my pew, thinking to myself, by jove, they’re talking to me, those ancient hebrew poets, the ones who thousands of years ago carved out these words to speak to my heart, here in the waistband of america, where leaves are just starting to rumble with thoughts of shedding their greens, too early just yet to unfurl great bolts of color.

truth is i tingle, through and through, here in these days of downright awe.

i am not a jew. but i love a jew. married him. bore our children. am raising those children in a house that is bathed in the best of two great and rather old faiths: we are catholic and jewish.

and this time of year, in these sacred golden-dripping days of awe, i cannot get enough of a whole-body immersion.

i am cooking it. praying it. setting the table with it. poring over the verses with it. inhaling every last drop of it.

everywhere i turn, there is awe. and it is sweet.

let’s start with the light: have you noticed the great kaleidoscope that is the turning of season has cranked it just to the north a notch, and now the sunbeams that hit us are amber molasses, tinged with spoonfuls of honey?

why yes, they drip on my bed pillows, my pages, my old creaky floorboards.

and then there’s that charge in the air, the one that has us un-sashing the windows, pulling back shutters, clearing the way so that cool night breezes might billow in, that air that seems at last purer and crisper, more certain to clear out our lungs from all the sticky still jungle air that took hold in the long hot summer.

but mostly, there are the prayers and the knowing now what i’ve always known: this is sacred time, new time, time that deeply matters. the days when our steps are counted, our deeds recorded, our fates inscribed in the holiest book.

God is paying attention, rapt attention, and so too must we.

thus, as if to upholster the year, to tilt it toward sweetness the whole way through, we stir it in in great dollops. a handful of raisins here. a bee-bumped macintosh chopped and grated over there.

we are watching as honey drools from a spoon. and wiping smudges, sticky, off from the table.

tonight this old house will be filled. the table as crowded as it knows how to be. if we could have layers of table, we would. i would invite everyone i have ever loved, and then some.

and just as the sun slips over the ledge and sacred twilight comes, having stirred the stews all night, and having set out my grandma’s silver, and the glasses of cobalt blue, i will strike a match and kindle the lights.

i will call on the legions of saints and angels who march behind me wherever i go. i will call on rachel and leah and rebekah.

i will look over (not down anymore, for the top of my head no longer makes it even to the cusp of his shoulders) at my firstborn, and gulp back the tear that comes with knowing he’ll not be home next year, or for years to come for that matter, on these sweetest of days upon days.

i will be humbled and filled all at once. will marvel that i, a deep quiet catholic, was somehow swept into the river that bathes me so richly, so wholly, so anciently. calling me back to where i must have once begun.

i count myself among the blessed, the ones who are stirred by the ancient hebrew poets, a people who marked time by the stirrings on the bough and in the field. who kept time by the heavens, the night star and moon. i read these rosh hashanah prayers through dual lenses, and in them i find such powerful majesty, such knee-buckling knowing of the intricacies of the human heart. today this meander is merely an unspooling, no deep lesson or question, other than this: what is it of this time of year that heightens in you a deep sense of awe, no matter your religion?

p.s. that rosh hashanah bread pudding? nothing more to it than torn-up bits of the night before’s raisin-studded challah, with a fat granny smith grated into it, along with a handful of even more raisins and cranberries (why stop when studding your pudding?) i had promised rosh hashanah bread pudding to my little one who loves a good reason to leap out of bed. and thus, once stirred from my dreams, i had little choice but to come up with a version that lived up to the promise.

the obstacle course called dinner

some nights it’s a miracle i don’t land in my seat at the old kitchen table with sweaty beads of saltiness pearled across my brow.

or perhaps i do, but no one’s brave enough to tell me. “yo, ma, you popped a sweat. calm down, it’s no marathon.”

to which i’d argue back, “why, darlings, you’re flat-out wrong, wrong, wrong. it is a marathon, and more. some nights, in fact, it’s a flat-out triathlon, complete with swim and bike and run.”

which i’m sure would be met with that wordless but emphatic refrain put to good use at so many kitchen tables across the land: the chorus of eyeballs rolling in counter-clockwise direction.

they’ve no clue, really, just what it takes to get that one square meal roundly on the table.

take the other night, for instance (in the back corners of my brain i believe i hear ol’ henny youngman snappin’, “take ’er, please.” to which the snare drum responds, ba-dum-ba-dum. end of comic interlude).

back to dinner: so it was a wednesday, the one worknight when i am home early enough to fend for myself (the other two i lean heavily on my mama, who has made it her business to plan and shop and cook and then try ardently to coax vegetables and meat down the throat of youngest child; but that’s another tale….).

the aim here was simple: eat before 8 o’clock, so there was half a chance of getting little one to bed before, say, midnight, his preferred hour of surrender to slumber.

problem was, as there so often is, i had two carpool runs, one from 5 to 5:35, the other from 6 till 6:30.

that left 25 minutes squeezed in, or, plan B, cooking interruptus, that ill-conceived attempt to do what can’t be done.

here’s how i pulled it off, after opting for door no. 2, the plot that can’t be sanely done:

on the way home from news-gathering some 35 miles away, i found my car swinging past a grocery store where apple-studded sausages are sold. a wee noise in my brain reminded me that young children had recently declared moratorium on all sausages except for apple.

suddenly, and without warning to driver, the car was screeching off of six-lane throughway and into parking lot. with eyeballs glued to watch, keeping track of countdown till the hour when call was coming from new york, for next round of interviews for news-gathering purposes, i fairly sprinted through the aisles.

panting at checkout, the checker asked why i seemed so rushed (note to self: do better job of camouflaging frantic harried state; it’s apparently not so pretty).

when i mentioned that i had an interview at 2–a mere 20 minutes and 10 miles away–she thought i meant so i could get a job. oh, no, i tried to explain, i have one of those; a job, that is. this was interview of newspapering persuasion. which launched said checker into five-minute rant on how said newspaper had thoroughly disintegrated over the course of the last year, and how i really ought to be ashamed of working for the sorry paper. (actually it might have been a 10-minute rant, but i excused myself after five and panted toward the door. there was that call coming in, any minute, and i preferred to not take notes while driving down the highway.)

once i’d wrapped up all newspapering for the day, i set to housewifery.

catching that rush, that tinge of autumn in the air, i’d dreamed up a menu nodding toward impending crispness. stewed apples were first up, so i chopped and chopped. and realized right away i’d forgotten the second of two items on my ad-hoc grocery list: the apple cider that takes stewed apples up a notch.

oh, well. my improvisational back-up plans were bombs, according to the young boy who appeared at the front door, wearing backpack and familial tendencies. he vetoed a splash of orange juice, lobbied hard for a gurgle of gingerale, but instead i took the coward’s route, and added pure plain water. just a tad. and shakes of cinnamon, to boot.

then, going with apple theme, i decided to slice and saute a round or two. sprinkled with cranberries, we had a fine blanquette (the french version of blanket) to dump atop the sausages.

oh, the sausages. hmm. they would have to wait. get browned and sizzled once i dashed back in the door from carpool no. 2. or else i could crisp ‘em up, and leave ‘em to get, well, soggy. (which in the end, i and they both did.)
and, let’s see, what about the baked sweet potatoes?

how to get those done, when they need an hour in the oven, but that hour is one in which a.) i won’t be home and b.) they’d be blackened if i let them run their course while i run mine?

hmmm.

and thus was realized this: the need for carpools one and two to be interrupted by a two-mile detour back to home, for the mere purpose of turning off the oven at appointed hour and wrapping spuds in foil. sort of like aluminum pup tent, or shiny holding pen for yams.

all this to say, it’s nothing short of olympic-level competition to get dinner on the table, for even a mere humble family of four, a sum just shy of the national average. and, mind you, most folks aren’t such fools as i, and willing to charge hither and yon for mere purpose of sitting down to multi-colored plate of early autumn harvest.

so once again i ask, what’s come of the sacred time at end of day, when all are gathered to sift through the hours since the dawn, the highs, the lows, the questions?

it takes near stubborn dedication to the prize. there are obstacles aplenty to knock you off the course, to steer you to the drive-thru, to tempt with dinner ala styrofoam clamshell.

ah, but there are fools, and i am one, who will leap through hoops, stumble over hurdles, even land kerplop in water pits and puddles. if that’s what it takes to score even five placid minutes at the table.

before the milk gets bumped, and the vegetables are picked at.

but for those five sacred minutes, when we join hands, breathe deep, and whisper thanks and blessing, i will do what needs be done.

even if i look to some as if i’ve just run through the sprinkler, and come to dinner in desperate need of bath towel.

love at the grocery store

there were tears at the breakfast counter this morning. oh, not because the flakes got soggy. not because of bad news on the sports page.

no.

it was the news that the big brother, the one who’s far away this week, won’t be home in time for tomorrow’s all-star game.

the little one, you see, is on the team. got voted there by the ones he slugs beside. the lineup of little stars who watch him leap and stretch and tumble, all in the name of making a TV-ready play.

the little one lives for games with balls. has far less patience when it comes to words and numbers. even less if there’s a pencil on the scene.

but give the boy a ball and he takes to it like he was born to make those muscles stretch, the synapses connect, the catching hand signaling the running leg at DSL speed.

i tell you, the kid is wired in ways that baffle me, his mother who could barely walk across a room without finding something there to trip on.

and the kid is utterly deflated that his all-star hero, his big towering eight-years-older brother, can’t be there in the bleachers.

he’d had hopes, he said, sniffling through his almost-tears, that his brother would be the one to call out his name, into the plug-in microphone, over the scratchy loudspeakers, as he approached the plate.

at the little ball park where the game is played, they go for schmaltz like that. good schmaltz, the best schmaltz; they play it up in pure old-fashioned ways.

glancing toward the breakfast bowl, once i saw the scrunched-up face, knew the tears were on the way, i did what any mama would: i dropped the spoon i’d just picked up, wrapped my arms around his shaky little shoulders, buried his soggy face into my fresh white t-shirt, gave no thought to the strawberry bits i would now be sporting in the bull’s eye of my belly.

i held him tight, and wished like anything i could rent a helicopter to get his brother home.

i tried talking so-called common sense, explained that no one knew, so long ago, that he’d be on the team, back when his brother made the summer plans, back when we penciled in the one short week away.

he blew his nose, the little one. slapped on sunscreen, shuffled off to camp. but as i drove him there i heard the sigh, asked, “what’s wrong?” he answered in two short syllables: his brother’s name.

i knew what that meant. i caught his face in the rear-view mirror. the boy was deeply sad, in one of those ways he’ll not soon forget. i can hear it now, 30 years away, the little one will rib his brother, remind him, how, when it mattered, he wasn’t there.

egad. dial ET, for emotional triage.

once i dropped him off at camp, i headed straight to the nearest first-aid station: the grocery store.

it’s often, at our house, the place to turn for makeshift reparations. end-of-a-long-week. half-birthday. any holiday from halloween to little easter. like a madwoman, i comb the shelves, find all sorts of bells and whistles to mark whatever is the moment. you’d be amazed what you find stocked at the all-purpose store. it’s where i spend my paycheck, with nary a second thought. long as it fits in a brown paper grocery bag, it’s hardly an indulgence. just a mama’s fix-it for whatever is the urgent need. and, besides, it’s open all night long, a convenience that’s downright essential when you’re someone who cooks up schemes at all hours of the night. and often on the fly.

i roamed the aisles, searched for all the balm and anti-sting cream that i could find. i started in the cereal aisle. found a limited-issue summer crunch, one with bats and balls to pour into your bowl. stumbled over to the streamer aisle, grabbed red and white and blue.

we’ll do it up, this all-star theme.

called the bread shop once back home (because i forgot to steer the car there), ordered up a loaf of cinnamon swirl, his breakfast favorite.

if i can’t bring on the brother, i can at least supply the band-aids.

it’s all we’re left with, sometimes.

too often.

and in the million other times a week when we flub it up, fall short, run out of steam, chase the little bugger back to bed (with nary a note of tenderness), well, we try and try again. most especially, when we think it counts.

we fill our grocery cart. we tuck away the treats. we scheme and hope.

we picture the little all-star, waking up to festooned room. sitting down to all-star slugger cereal, and swirls of cinnamon and sugar.

we’ll take pictures. tell stories. cheer our lungs out and our throats till they’re scratchy.

we’ll try to fill the stands with all the love we can muster.

and, yep, the seat beside me will be empty.

because sometimes all the wishing in the world won’t bring back the one you long to have there.

scrambled eggs and a prayer

in the end, after all of the worry, and all of the nights of stumbling from bed, retracing my steps to the sliver of light that seeped from the crack in the door of the room that never seemed to go dark…

in the end, after all of the fears that somehow it wouldn’t get done, that papers would never find words, and psyches would crack under pressure…

in the end, after 40 weeks of this school year that everyone labels “insane,” where parents in lines at the start-of-school book sale lean in and whisper of kids pushed to the brink of emotional breakdown…

in the end, it all came down to three eggs, cracked on the rim of a bowl, shells the color of cafe au lait cast in the sink, so many empty-hulled shards.

it’s all i could do here at the end, at the start of the final exams, as the boy who i love inhaled a few last lines of latin declensions, read back over ovid, gathered his pencils and sighed.

all i could do was stand there stirring, and praying. watching the yolks turn creamy and hard, pile high into egg drifts.

i imagined the protein, the strands in the eggs, bolstering all the cells in his brain. i stirred and constructed the scaffold, the brace that would hold up his thought, streamline the answers, hurdle him straight to the finish.

it’s all a mama can do sometimes. stand there and stir, and spiral her prayers.

“channel grandpa geno,” i told him, as i sprinkled cheese in the eggs. “he was a wizard in latin.

“and, remember, this is your national language,” i added, a feeble attempt to lighten the moment, to wedge in a sunbeam of humor, one that drew on his old catholic roots.

and then for a moment, i clung to that thought of my papa, saw him again in my head, vivid and clear and in color: his irish face round, decidedly rosy, his eyes atwinkle as always. i imagined him, an apparition of comfort and joy, see-through and floating, just over the desk of my young latin scholar.

i’d grown up with stories of how my papa, time after time, saved my uncle’s behind and his grade point average, besides. how, under the strict gaze of the jesuits, he’d managed to lift the edge of his test, so from the seat just behind and across, my uncle could peer at the answers.

i imagined my papa doing the same for my firstborn, the grandson he never knew, though over the years i’ve offered him up, made him a part of the canon of story. made sure through the power of word that one knew the other. my firstborn, in fact, can reel off tales of his grandpa. and i can picture my papa beaming, bellowing, at the antics and charms of my firstborn, the one with the mind so much like his grandpa’s.

it’s all a mama can do at the dawn of the year’s final passage: beckon the spirits, call on the clan. all the while stirring the eggs.

it’s time now to let loose of the worries. time now to lean into faith, and the soft chest of my papa.

it’s time to believe in the power of mind and of prayer.

it’s time now to rinse our hands of this year. to bid it goodbye and good riddance.

all we can do here at the end is serve up the eggs and the vespers.

as i scraped out the pan, buttered the toast, i realized this was the last. next year, there will be no end-of-the-year finals. and the year after that, when he’s somewhere at college, i won’t be there to stir–at least not the yolks of the eggs.

but wherever he is, wherever i stir, the prayers will always continue. and as long as i breathe, i’ll channel his grandpa.

for just such a classical challenge and triumph.

believe me, i hear the idiocy of such pressure run amok. i swore back in that book line, that i’d not succumb to the madness. despite my deepest intentions, though, this year crept up on us, got under our skin, jangled our nerves. forgive me for writing about it time and again these past few weeks. but typing is healing. and in the construction of word and sentence, i found wisps of solace. enough some days to carry me through till bedtime, when i got down on my knees and prayed. for holy strength to get to this day. and now, hallelujah, here we are. two tests next week, and i’ve got a senior in high school. holy lord……

editing cookbooks

not for a minute did i realize it was a move in pure self-preservation. nope, i thought at the time, it was merely, er, cute.

yes, a word we avoid here (since we verge so close to the treacly anyway, now and again), it was–linguistic misgivings aside–that very thing, c-u-t-e.

cozy, might be apt. clever, another way of saying much the same thing. the arch of a doorway, the place from one room to the next, carved out for books. a book nook, floor to ceiling, instead of a plain old pass-through from one place to another.

and not just any books. the books we drool over, yes, we do. the ones we splatter, and don’t ever mind. proudly, we point to the tomato paste puddle on page 256. flipping along, we stumble upon the chocolate smudge, the thumbprint of a 5-year-old at the time, pulled up close to the counter, making a tollhouse pie for his papa. oh, yes, the once-lickable souvenirs now caked, dried and pressed to the pages.

yes, up the walls of the archway that spills from our cooking room into the lying-on-the-floor-watching-the-cubs room, climb two vertical libraries for what amounts to my culinary history.

there are the standards from back in the ’70s, when my cooking awakened: molly katzen’s “enchanted broccoli forest,” and frances moore lappe’s “diet for a small planet,” from back when i dabbled in all things lacto-ovo-vegetarian, and hoped to personally wipe out world hunger.

there’s a whole shelf of molly o’neill, once the new york times’ food writer, and the only such times writer i ever mustered the courage to write. (she wrote me back, pithy, punchy, managed to escape bursting my bubble by scribbling a few sweet short sentences.)

there is a whole shelf for baking–something i don’t often do, though i do like to think someday i will. and one for children’s cookery books, from back in the day when my wee ones stirred by my side (complete with eensy-weensy rolling pin and cookie cutters used, oh, maybe, twice a year, tops).

there is a grilling shelf, and mostly it belongs to my mate who’s afraid to light up the flames. and a literary shelf, because of course some of the droolingest writing in the world is on the subject of what’s for lunch, or midnight supper, or trekking through france in search of the perfect langoustine.

but each of these disparate shelves has one thing in common: the 11.25 inches from one end to the other.

and therein lies my salvation, or my penance, depending as always on inclination and perspective.

let’s start with salvation. were it not for the end of the shelf, i do believe i might string cookbooks from now till the dining room, which is around the corner and 20 some feet away.

i would forever cling to irma rombauer who’s insisted since 1931 that there’s joy in all cooking. and i might shove her up against the silver palate twins, sheila and julee (who despite their defections of each other, forever are paired between covers, at least on my shelf).

heck, i might integrate the neighborhood with the settlement cookbook spine-to-spine with beatrix potter’s country cookery book. who knew that gefilte fish balls could so seamlessly swim with fried minnows?

ah, but shelves are not endless. they come to an abrupt and unflinching end. it is known as the wall.

and so, i am saved.

yes, frankly, and structurally.

my house might cave in, what with my delight in plucking a fine cooking book off a quaint little shop’s shelf. why sometimes i have no intention at all, not a one, of stopping and browsing, but then in the winds of some shop, startled by the look of a cover, or maybe merely a title, i hear my name called, in whispers and taunting.

and thus, due to my occasional giving in to the sin of temptation, i am required to partake of the puritan art of decision. yes, i edit. i cull and i toss.

when one new cookery tome somehow makes its way under my transom, i weigh and i think. i meander my way through the books of my life and i make a ruling. if alice waters is to move in, someone else must pack up and leave.

and so it is that the other morning i found myself deciding which pages of my past i would expunge, to make way for the ones that had been piled high on the coffee table since, oh, my january birthday, and perhaps, truth be told, the christmas or two before that.

after much mulling, and pulling, i at last ditched a mere four. their titles don’t matter so much,
(though because maybe you’re nosey–no, i mean insatiably curious–the expired were these: healthy ways with poultry, healthy ways with vegetables, two from my skinny-obsessed days. two from which i’ve not once made a single anything ever, healthy or otherwise.

i waved goodbye, too, to a grilling book that once came, i think, with my first weber grill. i’ve not once followed a grilling recipe, and i don’t think the folks who make grills ought to stray from the bending of metal. luau ribs that call for a can of chopped pineapple, and a splash of cooking sherry just hasn’t lured me since i got the book back in the twentieth century.

last to go was the collection of recipes from my firstborn’s laboratory school, where the global pot of professors’ kids made for a rumbly tummy if ever there was one. asparagus in cream, for instance, followed by porc aux pruneaux, which i take it translates to pork with prunes, though pruneaux does have a classier ring to it than that shriveled fruit my grandpa downed every morn to “keep regular,” as my grandma so instructed while steeping said lumps in lemon and water.)

ahem, as i was saying, it doesn’t much matter which titles are now in a pile to give to the library, the point is that–at least for me, who’s been so, um, ensnared with food for such a very long time–fingering my way through my cookbook shelves is very much a long winding road through my psycho-gustatory past.

and were it not for the need to make room on the shelves, i might never be forced to face, and get rid of, the pages i’ve no room deep inside to any longer remember.

once upon a time all my cooking guides were strict marms who played into my peculiarities–not a scant drop of fat and gallons of vegetables, many a page tucked with my scribblings as i counted and calculated my way to safe moorings.

now, at long last, i push aside such strictures to make way for ms. waters, she who celebrates all that comes from the earth, and our blessings to taste it and wholly partake of it.

at long last what lurks on my cookbook shelves is not tucked away for no one to see. but rather, it’s proud enough, and whole enough, to make for a wide-open arch that anyone can pass through.

it’s taken some time, but at last, the last of my odd cooking tomes is scratched of my name.

it is the deep secret of growing older: we learn to edit the chapters that once held us back, to make room for the pages that, now, finally, lay out the recipe for being deeply, delectably alive.

the dinner party

it started with a phone call one cold sunday afternoon, not so long ago. are you free next saturday night, was the plain-and-simple question.

yes, came the answer, after the requisite checking of calendar, double-checking with spouse, most likely checking in with kiddies to make sure they too could pencil it in. or tap it in, or however it is cyber-tots lock in a date these days.

once secured in the affirmative, another phone call was made. same question posed, left there on the recordable secretary.

and so began the cobbling of souls, the making of lists that for me is, well, about the hummingest hum i know.

i am, it seems, never so quick in the pulse as when i am deep in constructing a dinner party.

if given one more day of my life i think, yes, i do, i would call up everyone i love, and plenty of folks i don’t even know but would love to. i’d order up as many leaves for the table as i possibly could, break down the living room wall if i had to, to make room for all of the chairs. and then i would cook, cook, and cook some more.

oh, did i mention i’d borrow plenty of knives? for, darn it, i only have nine. although, somehow, in the spoon and the fork departments, i am swimming. i think when we were married, when slim little boxes came in many-a-day’s mail, there must have been some sort of 2-for-1 sale on all the parts of the place setting, except for the parts that do cutting. which means you might come for soup, and maybe some ice cream, if you come with more than eight of your friends. and surely, hopefully, some day you’ll come.

for, surely, positively, this is the truth: i would if i could spend the rest of my days dreaming up, doing, yes, even drying the dishes from dinner party piled on dinner party here at my drafty old house.

in fact, so nutty am i for le diner that i looked up from my vacuuming the other afternoon to tell my sweet mate the very something i was thinking at that very moment. then i stopped myself. said, “oh no, that’s too irish.”

to which he urged, “no, tell me.”

i hemmed. hawed. then spilled it: “when i die, skip the wake; just do a dinner party.”

to which, of course, he moaned.

and i went right on vacuuming fur balls.

so it was, all day saturday i found myself humming. humming, you should know, is me at my, well, purring-est.

i was, all at once, cooking, setting the table, imagining the conversations. i was deciding who would sit where for maximum conversational flow. oh, and i was putting out proud tall candles, and snipping the stems of tulips. red ones in february.

to lay out a table for a dinner party is to be bold. is to be alive, really. to be filled to brimming with all sorts of possibility.

it is, i realized, as i lifted the lid on the steeping, steaming coq au vin–my idea of the perfect february dinner party dinner–the most sacramental moment, perhaps, in this holy place we call home.

it is gathering friends, and sometimes near strangers. it is paying no mind to color or age, or political side of the table. it is inviting muslim to sit down with jew. it is asking the atheist to join hands as you stop and offer a few words of grace before picking up fork and, well, keep from jabbing.

it is detente over dinner. it is catching a gleam in the eye as you pass down the butter. it is laughing so hard over salad, you wipe the tears from your eye–and not at all from the shallot.

try not feeling fondly toward the one who pours a splash more merlot in your glass.

it is, wholly, the breaking of bread, and all that that means going back to the dawn of civilization.

it is eucharist, small “e,” defined: bread and wine, yes, but really, “the giving of thanks, offering graciously.” leave it to the greeks and the romans to give it a name, to launch it. the french to refine it. you and me to make it our own.

it is unfurling ideas and stories there at the old family table. it is drawing out thoughts from those you’ve asked to pull up a chair. it is listening. it is returning the thought with a question. and maybe another, and another.

it is, before you even get to the table, making the house come alive, igniting its reason for being. kindling lights. cranking the stove. making a fire. putting on mozart. or muddy waters. it is opening the door, with a gust of warm, wine-sodden air that can’t help but sweep in those shivering there on the stoop.

and for the one doing the inviting, it begins long before the bell rings.

it begins, for me, as i pluck from thin air the someones i’m dying to know, or simply to gather again at the edge of my table. the ones who i think will make for fine conversation. whose stories we might not yet know. whose ideas might rub off on my children.

a dinner party with children, i’ll have you know, is the height of my dinner-party definition. oh, i love a gathering of grownups. but i believe in bringing the children, more than once in a very scant while.

it is there, where the art of the napkin is figured out, that life’s lastingest curriculum is spread.

i am not, never have been, one to segregate the little people. i don’t believe in banishing the squirmers off in the kitchen. oh no. let them squirm right here among us. let them learn how to listen. let them learn the art of unspooling the story. let them follow words to a simmer, then rise to almost a boil, but right then, before the lid blows, let them absorb the knack for cooling it down to a slow gentle bubbling again.

and so it was, last saturday night, that i laid out a table for 12. spent the whole day, and part of the one before, toiling away. picking out cremini mushrooms. uncorking bordeaux. mismatching old plates. scribbling names onto red folded cards.

not a minute felt like a chore, or anything close. it was joy, only joy, pure, simple, undiluted.

there is something, i swear, to making a table that sparkles. to filling bowls and baskets and platters to spilling. to stoking the evening to come.

there is dinner. and then there is feasting.

saturday night at my house, we feasted. till our bellies–and hearts–were stuffed near to bursting.

when it was over, the last napkin tossed down the chute, the last bit of cake tucked away, i only had room for a very full sigh.

ever since, i’ve been licking my lips on all that’s leftover. and i don’t mean what’s in the fridge.

do you too love a dinner party? are you daunted sometimes by the notion? or have you mastered the grace of making it seem effortless? like something you do at the drop of any old reason? what are your secret ingredients to a dinner that lingers long after the lights are turned out? do you have a tried-and-true menu that works every time? or do you indulge in experimenting on company? is there a dinner you’ll never forget, and why?

when chill, er, arctic winds blow…

with all its might that mercury is push-push-pushing, trying with every ounce of january muscle to get up to where the one meets the zero, calls itself a brisk ten above.

even the rhododendron leaves, just outside my window, are curled tight into a rod, curled as if their life depends upon it, which in fact it does.

the feathered traffic at the feeder is slow to none, and, mostly, sparrow shiver in the pines. i think they’d like to call for carry-in, or better yet delivery. but the lines, i fear, are iced.

the morning when the world is frozen is a morning when you’d prefer, perhaps, to catch the nearest plane to tahiti. but, dang, that would entail walking to the curb–at least–to catch the taxicab.

so instead, why not do what i love best, and make yourself a list. a list is a beautiful thing. a romantic thing. you sketch your hopes and dreams. tick them off in little snippets. barely even have to finish your thought. you know what you mean. it’s you, for cryin’ out loud, making that there list.

so, then, with no ado–it’s too cold for adoing–here is the way i’d like to spend a ch-ch-chilly day at the end of a long, long, long, long week:

*crank the brand-new tunes my manchild made for me, the soundtrack, perhaps, from “once,” the movie a dear old friend told me months ago would inspire me. he was right. and now i can’t stop mumbling with all the words, my own odd version of pretending i too can sing along. which i can’t. just ask my boys. even the cat took to under the bed.

*fill the troughs, pour hot water into bowls for all the critters. there is nothing so satisfying–for this faux farmer girl–as making sure that all God’s creatures are duly fed and watered. i’d distribute little blankets if i could, but instead i put out extra christmas trees so they could harbor in the branches. more real estate, the better for those birds, way i figure it.

*grab the mcdonald’s coupon books, and drive to where it’s dark and even colder. pass out books to every hungry hand that reaches your direction. give the folks on lower wacker drive a place, and means, for getting in and out from this coldest cold. God bless my mama who gave me those books for just this purpose. God bless the soul who inspired her, whose story we found out only when he died, how he spent his winters doling out hundreds of dollars in vouchers for a hamburger and fries, and a hot, hot coffee that bought a seat where heat was all but guaranteed.

*once back home, grind the beans and get your own hot coffee going. stoke the steel-cut oats, while you’re at it, too. i’ve got the grandest formula these days: scottish steel-cut oats, 1/4 cup; water, 1 cup; sprinkle of salt (don’t ask me why, all i know is it works); flaxseed, 2 tsps.; sprinkling organic raisins, cranberries, apricot, chopped; 1 walnut, 1 almond, chopped; dry milk, 1/3 cup; cinnamon, a good stiff shake or three. now, get the water and the salt a bubblin’, stir and dump the oats, then all the rest. let it simmer half an hour. dump it in your favorite bowl (mine is red with fat white stripe), grab a porridge spoon (mine is wooden, and it sailed in from old vermont). take a seat at the kitchen table, staring out at birds, who might be staring back at you. invite them in, for heaven’s sake. they might love the porridge.

*whisper benediction for the oats, the birds, and all the souls far colder than you have ever been. pray to God that warmth blows in, deep and boldly to their souls. don’t let them die, God, frozen to the city’s underbelly.

*and, besides all that, the best idea for how i’d like to spend an arctic day is invite a house full of folks i love. cook all day the day before, and fill the vases with blooms galore. stack the logs to make a fire. putter here and there, making it a house that shines, and shouts: warmth dwells here. come in, come in. leave your cares outside, where chill winds won’t stop blowing.

peace i wish you at the end of this long week. and warm toes besides.

do you like lists as much as i do? what would you do on a chilly arctic day when the poor old mercury makes it up to 10, then dwindles back to less than zero?

pause. bow head. strike sullenly pose.

“did you see the obituaries?” my mother asked, first thing in the day. she was insistent. she was bothered. “peg died.”
peg bracken, she meant. peg, who might as well have been our next-door neighbor growing up. the one who passed virginia slims over the picket fence. poured a cocktail soon as the kiddies polished off the afterschool snack. i’m thinking her only use for her apron was to wipe her muddy shoes.
despite–or because of–the anarchy, my mother consulted her. followed her. stood off in the corner of the kitchen with her, often, snickering in a most unusual way.
she was apparently, my mother’s alter ego. she was, maybe, the trouble maker my mother wasn’t. she was, in 1960, when her book came out, her cookbook, her anti-cookbook, really, “the i hate to cook book,” a breath of something new in the simmering winds over by the range (for what had been the stove became the range somewhere there in the latter half of the last century).
her most famous recipe, perhaps, the one that’s been unfurled for all the obits, is the one for “skid road stroganoff.”
it goes like this:
“start cooking those noodles, first dropping a bouillon cube into the water. brown the garlic, onion and crumbled beef in the oil. add the flour, salt, paprika and mushrooms, stir, and let it cook five minutes while you light a cigarette and stare sullenly at the sink.”
you must love a woman who whisks “sullenly” into a recipe for stroganoff. even if the thought of stroganoff has you grabbing for the counter while you tamper down the urge to gag.
growing up in my house, that blue book with the funny drawings–the ones done, by the way, by the fellow who drew the daylights out of eloise at the plaza–stood mostly for one dish: a dish once named chicken rice roger. but in our house, now, it is mostly known as chicken rice grammy, for it is the perfect embodiment of all things cozy in a covered dish.
it a.) comes bubbling out of the oven, it’s b.) made with stuff dumped from a can, and c.) it is the surest cure for a bad day that i can think of.
of course, i’ve gussied it up over the years. but still i follow its cardinal rule. i mostly mess around with things that can be found in tin cans. i add artichoke hearts, which might be fresh or might be frozen, but from a can are just as good. i dump in broth, which again is happy from a can, is practically unheard of in my house in any made-from-scratch rendition.
it seems only fitting that we all bow our heads today. for i am guessing peg made her way, in one form or another, into the kitchens of our youth.
perhaps your mama made stayabed stew, sole survivor, or spinach surprise. certainly while james beard was informing half the country to saute, a fancy french verb that stood up the more american “to fry,” ms. bracken, a working mother who used her maiden name, mon Dieu, was subverting the other half.
fact is, she and betty friedan arose together. it’s just that bracken was a little quieter in her subversion. she was infiltrating suburban kitchens while friedan ransacked the bedrooms and beyond.
as the child of the i-hate-to-cook-book era i, of course, revolted. i grew up in a house where hamburger helper was tested for the folks at general mills. if it came, ready-mix, in a box, we were guinea pigs.
is it any wonder, then, that i stopped eating when i was 18? i decided frances moore lappe, she of small planet diet fame, she who wanted all the world to be fed fairly and without animal sacrifice, was more my speed. i worshipped at her altar, complemented protein all through college.
i am old enough, and far away enough, that now i see the humor in that food chain. my mother snickering in her corner, taking shortcuts willy nilly; me in mine, measuring grains, steaming broccoli.
i am old enough, now wise enough, i hope, that i can see the beauty too of a voice that whispered to my mother. told her to dump the long hours at the stove. get out, perhaps, play tennis.
for my mother who grew up with french nuns and a mother who made her wear white gloves, peg bracken was the safest radical she could invite into her kitchen.
if i drank something more than the wimpy white wine i sip each night, i might pour and lift a dry martini.
to peg, who made my mother giggle. to peg, who had her dumping cans all around the kitchen.
in case you’d like a taste o’ peg, here’s what we call chicken rice grammy
3/4 cup uncooked rice
1 cup mushrooms
grated onion
1 3/4 cup chicken broth
chicken pieces

brown chicken. dump on top of rice, mushroom, onion, broth. bake, covered, at 350 degrees for 1 hour.

(note the lack of specificity up above, no one advising organic broth, basmati rice. just get the job done, seems to be the underlying message. and get it done, it surely did. a more delicious comfort dish, i’m hard-pressed to find.)

p.s. i might be late tomorrow, as i must be in court at 9. and i think, even with chicken rice grammy under my belt, my tummy might be churning. so perhaps i’ll play court reporter and fill you in after all the courtroom drama. egad.

casserole for a faraway friend

she is, sadly, only the latest. only the latest in a circle that keeps growing, a circle for whom casseroles are tossed together, tucked in the oven, delivered.

delivered in hopes that what you stirred into it might lift the burden, find the cure, deliver them from whatever evil ails them.

this time the casserole is for a faraway friend. in case you pray, she is sliding into that ether-stoked sleep at 1 o’clock today, on a hard cold surgical slab in baltimore, actually. the skilled hands that will wield power over her are hands that will be excising cancer, taking it out from her breast, dammit, that place that keeps harboring cancer in women we love.

my friend is young. has children far too young. beautiful little children. a girl with such curls you want to sit her down with a set of oils and paint her, and frame her. a sweet big-eyed boy too little to be worrying about his mama. today or any day.

my friend, who writes roadmaps through kitchens, but really through life, for a living, for a newspaper, sent an email the other afternoon. short and to the point. let a whole string of us know with the click of a button that she was having surgery today, breast cancer surgery. she apologized for the abruptness of the news and its arrival via email. but she explained, as if she needed to, “i haven’t been much in the mood to talk.” vintage for my friend, telescoping so much in so few words.

she asked for whatever sorts of prayer anyone might happen to pray. then she mentioned, in a short string that sums up a mother’s worries, that casseroles, spring play-dates and dog dates would be more than welcome.

casseroles, it seems, are the latter-day pulling in of the wagons. when the distress call is put out, like so much gray smoke rising from the chimney of the house where the hubbub is happening, the women all through the village start lining up at the door with their casseroles, their bundt pans, and their tins filled with brownies.

here in the town where i live, the labyrinth of home-cooked, personally-delivered meals is astounding. i’ve seen it go on for months and months, strategically organized, right down to the plastic cooler on the front porch where meals could be dropped without ever disturbing the family inside nursing a young daughter through death, it turned out.

the meals come so fast and so furious, the need for air traffic controller is immediate. without asking, it seems, someone steps up and takes over that slot, too.

there is, when you’re the one being fed, nothing to do but sit back on your pillows and take in the great parade of great food, and unshakable friendship. some come quick, simply. some are elaborate works of caring. i still remember the kindergarten teacher who sent food for my little one and thought to make it into a smiley, silly face of cut-up fruits and squiggly pastas. my little one, who often doesn’t, gobbled it.

the point when making a casserole is that it is, often, the only darn thing you can do. we all know what a slippery slope we dwell on, we all know that to suddenly be whisked from your role there at the command center, in the kitchen, at the phone, in front of the computer, is to surrender all semblance of order in your life and the lives of those who you love.

in the case of, say, my faraway friend, she is, God willing, going to be all about the business of healing. even if she hadn’t asked, the impulse would be there: to bake something, make something, take something, do something, dammit, to ease her equation. even if something boils down to nothing so much as a few chicken breasts, rice, broth, a sprinkle of herbs, salt and pepper.

in the casserole for my friend, which was only one made in her name (the distance is daunting, a serious impediment to personal delivery), one made as my way of harnessing forces, sending deep casserole vibes out into the far-flung universe, i took that casserole up a notch or three.

you see, she is all about cooking. she writes, droolingly, about cooking. i have called her for years my latter-day laurie colwin, that magnificent writer of food (“home cooking,” “more home cooking,” both still in print), but really of life, who died way too young, at 48.

i realized yesterday i stop my comparison of my friend to laurie at the point where her words make you hungry and fill you all at the same time. nothing more. no further comparison.

so inspired by my friend, i took my stand-by, family favorite, chicken rice grammy, dug it out of the old wooden box that i hold together with a red ribbon these days. and i spun it up a notch, made it chicken rice for my faraway friend.

added red peppers, wanted a splash of intensity for my friend, even if it meant my one boy who would eat it would curl up his nose, shove red bits off to the rim. added artichoke hearts. this was my friend, for crying out loud. sophisticated, elegant, always-producing-the-unexpected, my faraway friend, this was.

slid it into the 350 oven, filled the house with its savory perfume. these were vespers for my friend, lifting and rising. an hour later, i took it out of the oven, slid spoon into thick creamy middle. this is comfort as comforting as it gets.

nearly three springs ago, my friend wrote about bringing ready-to-eat meals to a friend of hers who’d been up all night having a baby. “if she can deliver life,” my friend wrote, “you can deliver dinner.”

she went on to tick through the essentials: it need be “something sturdy enough to endure the car trip. resilient enough to shrug off freezing or reheating or neglect. and yet, nothing so grab-n-go as to be mistaken for K rations.”
she finished with this, most essential: “a dish that suggests hope.”

she went with risotto, risotto with shelled english peas. i went with rice and artichoke hearts. the intent is the same: my faraway friend, wherever you are, however knotted your tummy, there is a casserole baked and waiting for you. now all i have to do is figure out how in the world to mail rice, broth and perishable chicken.

i am certain as i could possibly be that i am preaching to a choir of practiced casserole bakers, a whole phalanx of hot meal deliverers, whether you have a casserole story, a recipe, or a tip for taking that delivery up quite a notch, won’t you please pull in your chair and spill here at the table?
and, oh, by the way, here’s my chicken rice for faraway friend….

herbs in winter, er, spring

okay, so five minutes ago it was winter. and most likely, another three and it’ll be winter again. last week at this time, out my window, it was the arctic tundra. only thing missing was the mush dogs.

now, it’s a vast ocean of blkkh. isthmuses of scant white surrounded by sog (the ground when it’s turning to sponge). small continents of sooty dirt gray melting inch by inch into more sog.

but the slant of the sun, and the scant touch of warm in its rays, sends message to brain cells: stay alert. there might be an end to the winter.

now i might be an avowed winter baby, love nothing so much as a warm woolen sweater, my nose pressed to the glass, watching the cotton puffs fall from the sky. but even the winteriest among us need a small pharmacopoeia of sorts to get through.

my elixir of choice, the one i take daily, multiple times a day if i can, is the herb. not dried in a bottle. not crumbly inside of a jar. but real and alive, bright green on my sill.

i’m telling you the thing that gets me through winter, the thing that keeps red blood in my veins, is the three pots of herbs that grow just to the west of my faucet.

they keep me, well, green. i snip and i sprinkle all winter. i am plowing deep into faux summer, even if only through the gardeny taste that swirls on my tongue. fresh and just picked, right here in the months of the snows.

i bite into the clean of cilantro. i melt for the tender tendrils of thyme. i spice things up with my ruffly basil.

i make believe it’s my garden. i clip and i water. i turn to the rays of the sun, so my herbs they can be coaxed to trigger the chlorophyll. (or however that works.)

but still, i am sorry to say, with regular regularity, my herb pots they shrivel and die. i might get a few weeks out of the basils. the lavender rarely lasts a few days. and the thyme it takes time before it turns crumbly and brown. not unlike those herbs in the bottles. but eventually it indeed turns to crumbly.

and i, sisyphean in style and psyche, i trod a path right back to the produce patch at my grocery. pluck myself one more pot of basil at $2.29. not a high price for midwinter sanity. if in fact it’s keeping me sane. (those around me might tell you it’s not.)

i do know it’s keeping me pink–pink in the cheek, pink in the heart. i eat them for breakfast and dinner. snip them on cheese on my toast. toss with abandon into the stew. adorn like a madwoman each plate, basil poking from the mashed potatoes, thyme branches strewn like the wreath of a hero atop the breast of the chicken.

and if i manage time for some lunch, i eat them then too. i reach in the drawer for my kitchen shears, pretend that i’m clipping an orchard of espaliered apple when only it’s a 4-inch expanse of basil, or the lone stem of lemony balm.

if you’ve been poking around here awhile you might have noticed a trend: i am a girl who leans heavy on growing things. i am a girl who needs gardens. even in the dark days of winter.

so i strongly advise (and i’m not one for advising) that if you can, if you don’t mind the suggestion, you dash to the store, any old supermarket, and you buy the start of your garden.

these herbs, they have history. it’s not like they’ve just been invented. they’ve been around for a very long time, and they seem to have a solid reputation for making for all sorts of miracles.

a quick run through the herbalist, in alphabetical order:

basil, they gave as house gifts in renaissance england because, well, it kept the house flies away.

bay they once planted to protect from lightning strikes. the caesars were certain it kept conspiracies, hmm, at bay. in the 1700s, in england, it was thought to do in the devil. the priestesses of apollo chewed a wad of the stuff before spewing a prophesy. not long after, wise folk prescribed placing it under your pillow to bring on dreams, prescient in nature.

chervil, a sure cure for hiccups. sipped in a tea, that is. (sipped in a broth on holy thursday, it reminded the sippers of the resurrection of christ. says so right here in a book.)

coriander is one of which to be careful. ol’ pliny, the first-century agrarian, cautioned against too much of the seed, which he found had narcotic tendencies.

dill, diluted in water, is the thing to soothe colicky babies.

lemon balm is a tad schizophrenic. on the one hand, it was recommended to scholars to sharpen their memory; on the other hand, it was doled out to insomniacs who found slumber in its sleep-inducing powers.

marjoram, thought to have been touched by venus, is big in the love potion department. italians bunched it in nosegays and gave it away to banish sadness. how lovely.

mint will whiten your teeth.

oregano is boldly medicinal, prescribed over the ages for everything from toothaches to opium addiction.

parsley was first eaten by romans; the greeks long before them made wreaths for weddings and sports games, but only fed it to horses.

rosemary, get this, was put under the nuptial mattress to a.) increase faithfulness, and b.) keep away insects and mildew. who knew?

tarragon, thought to fight off fatigue, was slipped into shoes in the middle ages just before trodding off on a pilgrimage. a pre-cursor to dr. scholl, i suppose.

lastly comes thyme, an all-purpose herb if ever there was one. athenians made liquors of it, bathed in it, burned it in temples. egyptians embalmed with it. i thought it was good on my cottage cheese.

and so, there you go, an alphabet of herbs for your daily consumption. grow them. sniff them. stuff them under your mattress. not a bad sport for the winter.
